Here are some tips on safe food handling. Once you've cooked your big pot of something you have to cool it down for packaging and freezing. A Polder digital thermometer comes in handy here.
Bacteria can survive between the temperatures of 140F and 40F
so as your covered pot cools the second it gets to 140F you have to get it below 40F as quick as possible. My fridge is usually empty so it's not a problem to stick the warm pot in there but if your's is packed a cooler filled with ice can do the trick. Once it's below 40F you can package away. Try to keep as much air as possible out of the package and try to keep your seals as clean as can be.

Make enough of some food for several servings. Then, package the servings up in individual serving sized containers (ziploc, tupperware, glad, etc).
