It's funny, I just made a cheesecake last night and I brought some for lunch. If you want the easiest recipe in the world, here it is:
You can buy the gramcraker crust for like $1.49 or
1 1/2 cup of gramcraker crumbs.
2 tablespoons of suger.
Mix these two and press the mixture into a pan or pie dish.
Filling:
2 packs cream cheese softened(about 16oz. or 500grams)
1/2 cup of sugar
1/2 teaspoon vanilla
2 eggs
Preheat your oven to 350 degrees. Mix the room temperature cream cheese, sugar, and vanilla in a large bowl until totally mixed. Add eggs and mix again until totally blended. Pour this mixture on top of the gram craker crumbs. Bake for 40 Minutes. Cool and refrigerate for 3 hours or over night.
PS - After the eggs were mixed in, I added about 1/4 cup of evaporated milk and mixed it in. Then I added 1/2 cup of white chocolate chips (mini are the best) with a spoon. I poured the mixture in on the crumbs and added some more CRUSHED chocolate chips on the top with a little bit of coconut flakes. When I was serving it, I had pureed real strawberries and drizzled some on top. Real good and easy.

Crust:
2 cups graham cracker crumbs (or 2 cups crushed chocolate wafer crumbs)
1/4 cup sugar
6 T (3/4 stick) butter, melted
Filling:
2 1/4 lbs cream cheese, room temperature
1 2/3 cups sugar
5 eggs, room temperature
1 cup Baileys Irish Cream
1 T. vanilla extract
1 cup semisweet chocolate chips
Coffee Cream:
1 cup chilled whipping cream
2 T. sugar
1 t. instant coffee powder
chocolate curls

For crust: Preheat oven to 325F. Coat 9" diameter
springform pan with nonstick vegetable oil spray.
Combine crumbs and sugar in pan.
Stir in butter. Press mixture into bottom and 1" up
sides of pan. Bake until light brown, about 7 minutes.
Maintain oven temperature at 325F.
For filling: Using electric mixer, beat cream cheese
until smooth.
Gradually mix in sugar. Beat eggs in one at a time.
Blend in Baileys and vanilla.
Sprinkle half of chocolate chips over crust. Spoon in filling.
Sprinkle with remaining chocolate chips. Bake cake
until puffed, springy in center and golden brown,
about 1 hour. Cool cake completely, be careful not to
leave the cheesecake in a drafty area, otherwise it
will crack.
For cream: Beat cream, sugar, and coffee powder until
peaks form. Spread mixture over cooled cake.
Garnish cake with chocolate curls. Refrigerate for 24
hours or more before serving so that all the flavors
can blend together perfectly.

me Honestly? I just buy the Jell-O instant cheesecake box. It comes with the graham cracker crust mix and the filling. I add 8 oz. of softened Neufchatel or regular cream cheese to the filling when it's just about done to add a little more flavor and volume to the mix. I usually buy a quart of whole or 2% milk to use instead of skim for flavor and texture.
This is one of those recipes i've held on to since i was first married cause it's GOOD!
1-1/2 lbs cream cheese
12 oz. granulated sugar
2 oz. cornstarch
5 whole eggs
2 egg yolks
zest of one lemon
zest of one orange
1/2 cup heavy cream or sour cream
cream together cream cheese and sugar until very smooth and fluffy - about 10 minutes in a mixer. Add cornstarch. Add eggs and egg yolks one at a time until well incorporated. Add citrus zest. Stir in cream or sour cream until well blended. Pour into greased 10-inch form. Bake in water bath at 360 for 45 minutes to 1 hour Cool and unmold the 10-inch cake.
You can add any type of crust you like to this before or after baking and top with any type of glaze, warm or cold.
I use graham cracker crumbs from the box and mix 1-1/4 cup crumbs with 1/4 cup sugar and 5 tbsp. butter or margarine with a mixing/serving fork in a small bowl, then pour and press into the bottom of the pan.
The crust can be varied, as the cream or sour cream adding a little brown sugar or cinnamon or just extra sugar.
I don't have the fancy form pans so i find two pans so that one can float inside the other at about an inch deep as long as it doesn't boil into your cake mix. I fill the pan with water while it's in the oven and then set the cake pan of mix in the water bath pan so i don't get water in the cake mix - the trickiest part, but not hard once you get the hang of it.

Bake at 350 degrees for one hour. Combine sour cream, lemon peel, and sugar; carefully spread over cheesecake. Bake 5 minutes. Loosen cake from rim of pan; cool before removing pan. Chill. Makes 12 servings.
