The best nachos start with a great melting cheese, Chihuahua Cheese, a semi-soft Mexican cheese.
Chihuahua cheese is widely sold outside of Mexico, it should not be necessary to look for substitutes, however a very mild cheddar or a flavorful jack cheese could replace it in many recipes.
Nachos
Take tortilla chips (Del Rey brand from Del Rey Tortilleria Inc. in Chicago are excellent), spread refried beans on each chip, top with slices of or shredded chihuahua cheese, lay chips out on a cookie sheet and heat in the oven or under broiler until cheese melts. Top with home-made guacamole and/or sour cream.
For an added kick brown some chorizo, Mexican sausage, and spoon over nachos just before removing nachos from oven.
