Its a sioux ( I have been corrected on my spelling its (CHOUX) pastry ( prononced shoe ) that you can have either as a long finger shape ( Eclair ) or as a ball , again another correction its not ball its ( ROUND) don't blame me, blame the one below me!! lol (Profitterol ) they both can be filled with fresh cream or sioux pastry cream ( Chefs Custard ) The Eclair is topped with chocolate that sets hard, and the profitterol is covered in creamy dark chocolate sauce.. Heck, why do so many people think a type of French pastry is called 'Sioux'??? Don't they know ANYTHING?!?

For their information, a Sioux is a tribe of American Indians, or a member of that tribe - or the language of that tribe.

The PASTRY is called 'chou', plural 'choux'! And a profiterole is ROUND - filled with cream, yes - served with a hot chocolate sauce - and very nice! But the long fingers of choux filled with cream and topped with chocolate are called (in English) CHOCOLATE ECLAIRS - and can be called éclair au chocolat in French!!
