Now, for the USA and Canada that's difficult because these are countries of immigrants. They don't really have any specific "ethnic" foods. Since the people in both countries have come from all over the world, it's extremely diverse and I can't specifiy any particular foods that are purely American or Canadian except like macaroni and cheese and hot dogs.

Now if you were talking about dishes then you would have to count the tamale, the taco, pollo en mole (chicken mole), Chile Relleno (Stuffed Poblano Pepper), Huachinango a la Veracruzana (Red Snapper like they cook it in Veracruz, a Mexican port on the Atlantic Coast), Guacamole. Many things are prepared using the ingredients mentioned, I do not know if that was what you were asking.

Burritos, nachos, fajitas, salsa and chips and other Americanized Quasi Mexican stuff are not Mexican at all.
