6. Tumeric ? teaspoon, ground
7. Paprika 2 teaspoons
8. Fish sauce 3 tablespoons
9. Salt 1 teaspoon
Gravy
1. Homemade chicken broth 10 cups
2. Chick-pea flour (besan) 1 ? cups , soaked in 2 cups water for 30 minutes
3. Shallots ? pound, peeled
4. Coconut Milk 2 cups
5. Fish sauce 1 tablespoon
Garnishes
1. Fresh eggs noodles 2 pounds, cooked and drained
2. Onion slices 1 cup, rinsed under cold water
3. 6 hard-cooked eggs ? pound, peeled
4. Crispy fried noodles 2 cups ( ? pound) , purchased or homemade
5. Chopped fresh coriander 1 cup
6. Dried hot red chilli flakes, lightly toasted
7. Lemon wedges
Preparation
1. Divide the chicken into convenient pieces; remove and discard loose skin and fat. Bone the chicken: remove the meat from all parts except the back, which may be used for another purpose. Cut the meat into ?-inch cubes.
2. Heat the oil in a large pan. Fry the onion, ginger and garlic over moderate heat for 2 minutes. Add the tumeric and paprika and continue to stir-fry.
3. Add the chicken, fish sauce, and salt. Stir-fry the mixture for 10 minutes.
4. To make the gravy, add the broth to the pan of curry, and bring to a boil over moderate heat. Add the chick-pea (besan) liquid and cook for 20 minutes, stirring continuously since the besan has a tendency to stick. The gravy will begin to thicken.
5. Add the shallots as the gravy simmers, and cook for 10 minutes. Now add the coconut mild and fish sauce and cook for 10 minutes more, stirring constantly.
Serving
For each serving, fill soup bowls with the ingredients in this order:

1 tablespoon onion slices
hard-cooked egg slices
1 cup hot chicken, curry with gravy
2 tablespoons crispy noodles
2 teaspoons fresh coriander
hot chili flakes, to taste

4 chicken breasts, cubed
1 onion, chopped
2 teaspoons turmeric
2 teaspoons paprika
3 cans coconut milk
1 cup garbanzo bean flour
5 large shakes of fish sauce (to taste)
Vegetable oil
Condiments:
- Cooked egg noodles
- Sliced onions, caramelized
- Cilantro
- Chili flakes
- Lemon or lime wedges
- Chopped hard boiled eggs
- Green onion, chopped
- Crispy noodles
1. Sauté onions in oil. Add chicken, turmeric, and paprika, sauté.
2. Brown garbanzo bean flour, stirring constantly. Let cool.
Add some chicken stock
to flour and make a paste, until cornstarch consistency.
3. Add coconut milk and the rest of the chicken stock to the paste,
