A few years ago, a Punjabi man I worked with talked me into trying something his wife made, it was similar (but spicier) to a taco. I dont recall the name, and no longer live in the same state - does anyone know what this dish might have been? Id love to try making it!

Answer:
He gave you a roti(Indian Bread) filled with meat.

A lot of people who have never tried Indian food, usually start eating Indian food that way.

Hope it healped.
punjabi papad? stuffed nan? Aloo ka paratha? More description please?
Try browsing here http://www.recipesindian.com/
Roti with a spicey indian dish perhaps
go to the Indian restaurant then ask them they must have what u r looking for .I am sure we Indians make good food.once u start liking Indian food u will be hooked up.
Maybe a Samosa? They're usually Triangle Shaped puffed pastry filled with ground meat and/or veggies.

Samosas are a lot like Empanadas and Jamaican meat pies.

Or maybe it was a puri/poori (deep fried wheat flatbread) served with garbanzo beans (cooked in tomato sauce?).

Hope that helps.

mari
That has got to be a pappad.
It's probably a stuffed chapati or paratha. Flatbread with meat or vegetable filling. Just google something like aloo paratha and you'll probably find links to useful recipes.
