Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

Yes. Stick with rolls rather than "nigiri" sushi (the pieces of fish on a glob of rice).

Use good quality rice cooked in a rice cooker if possible. Add sushi vinegar to taste -- less is better. Let the rice cool down.

Get yourself a sushi roller. You can put saran wrap on the roller to help keep it from sticking but it's not required.

Put whatever you want in the sushi that you think will taste good. If you use raw fish make sure to buy it from a store that sells sushi-quality fish, otherwise you risk getting parasites.

California rolls are really easy. Buy cooked crab meat, add some mayo and some avocado, and you're good to go. You can also do a spicy tuna the same way, just add some kind of chili sauce to taste.

Vegetable rolls are good, use cucumber, gobo (pickled carrot) and radish sprouts.

Put rice only on the first two-thirds of the seaweed and put the stuff you want in the roll in a line about a third of the way down. Roll it up, and squeeze it tight.

Don't be put off if it doesn't look too good the first few times, sushi is an art and it takes practice. This is why you shouldn't do the nigiri sushi -- that takes a lot of training to do well, otherwise you just end up with chunks of fish on chunks of rice. If you do try to cut the fish, use a very sharp knife and cut long, thin strips.

By the way sushi is the rice, not the fish. Anything you make with sushi rice is called "sushi". My ex (who is Japanese) used to make this great dish called "Hokkaidon" that was sushi rice in a bowl with cut pieces of raw salmon, ikura (the big orange fish eggs) and raw squid on top, sprinkled with a little bit of shredded nori (seaweed). This is also sushi and really good if you do it right.
