Just bought some beautiful tomatillos and want to eat some for dinner, any good recipes. Prefer recipes you've tried and loved

cut it up really smal and put it in your meatloaf it adds a great mexican kick to an old favorite

I make a green Salsa with them that is really good. I put them in a blender with some onion, LOTS of cilantro, green bell pepper, garlic, and green chili peppers (Serano peppers work well).
I often spoon it over chicken and bake the chicken. Yum!
They're really good in guacamole/salsa. I mix avacados with roasted tomatillos, jalapenos, red onion, garlic, and seasoning to make a really good guac. It's great on a white fish like tilapia or with chips! GO ORGANIC!
