You can go to Macrocenter in Kanyon and get a sushi making kit for about 30 YTL. They also sell dried seaweed, wasabe, and soy sauce. I don't know of any classes you can take, but you can find directions on the internet (and there are even directions in Turkish!). Good luck!

I don't know if you specifically wanted a place to go to learn to roll sushi.. but there are quite a few videos on YouTube.. and videos can be more effective than reading or looking at pictures.

You need to find an Asian supermarket that sells short gain rice, Japanese rice vinegar, dried seaweed sheets (you can make hand roll without using the bamboo roll mat - use plastic wrap can do the trick as well). As a beginner, you may try to use cooked ingredients to prepare sushi (boiled shrimps / deep fried soft shell crabs / boiled or stir fried scallops, etc.) and I know you can find carviar in Istanbul, right?
