You can make the red beans from dried or just open a can of them. You can crush your own garlic or use powdered or jar.
Red beans
Cooked rice
oil
onions
garlic
Heat oil in a pan.
Sautee onion and garlic till translucent
Add red beans and fry untill most of the moisture is gone.
Use the back of a wooden spoon to mash some of the beans in the pan.
Add the cooked rice and stir fry the whole thing until well mixed and heated through
It's traditionally served with fried eggs, corn tortillas, natilla and coffee. You can use salted sour cream if you can't find natilla or anything close.
Vigaron is the national dish. Its a cabbage salad with boiled yucca on top of it sprinkled with chicharrones. You can Google a vigarron recipe I'm sure so i don't waste space here.
