I live in Canada and do not know about Mexican potato chips. I make nachos out of old tortilla shells, roasted on a grill with taco seasoning and oil.

Mexican chips are tortillas ..corn or flour.. that are fried and served with salsa or cheese.. Lots of times they seem tough to me..not tender and crunchy like the ones in bags..but fried correctly they are quite good.

According to what I've read, nacho chips started out as stale tortillas that the cook didn't want to waste. The tortillas were cut into strips, deep fried, and served with some kind of sauce -- anything from salsa to mole, depending on what was available.

So take either flour or corn tortillas, cut them into strips or triangles, and deep fry them until they're crispy. Salt them, and serve them with the sauce that you prefer. Homemade tortillas will give you the best results, but storebought work just fine, too. Just make sure that they're a bit stale.

just take store bought corn tortillas and cut in 8 pieces and fry in veg. oil. add salt to taste. there is nothing like home made chips!!
