Real Belgian Chips (Belgian Fries)
Ingredients
Serving: 2
- Potatoes (3 large ones per person)
- Deep fryer
To Prepare
Peel the potatoes and slice them in ovals 2cm thick. Cut chips out of the ovals 1cm thick. Rinse thoroughly (to remove the starch from the potatoes). Dry them well in a teatowel to avoid them sticking together in the fryer, and to avoid spattering in the pan. Fry them first at 160degrees, do not brown. Shake them into a dish with kitchen paper and allow to cool. Repeat until all the chips have been pre-fried. Allow the fryer to heat to 170 or 180degrees. Now fry the chips a second time until golden brown. Don't fry too many at once as this causes the oil to cool down which makes the chips soggy. Enjoy!
Note : The name "French fries" is often used but incorrect. Fries originated in Belgium and not in France. Just that you know :-)
I don't really know, but you can't eat them without a bowl of mussels!
It's because they are cooked differently. The fries are put in the oil until limp, not golden then taken out and let to cool. Then they are put in hot oil and fried again until golden. Check out this site...

They are cooked once, left to rest and fried a second time. This is not necessarily done in vegetable oil ,which is tasteless, but in dripping which has taste. They also use different brands of potatoes which taste better than most of our bland varieties.
