parboil the rice with some chicken/beef stock...while doing that blend some tomatoes,red peppers,chillies,onions and pour into a seperate pot.add some vegetable oil and leave to boil for a while.
when the rice is just a lil soft pour it in the pepper mixture and add any spices and some tomato puree depending.pour in some sliced tomatoes and onions and cover it with a bit of foil paper.leave it for a while on low heat.it should come out perfect!!
