If a recipe calls for plain yogurt can I use butter milk instead?

Answer:
depends on the recipe, but I am sure you could (i know I have).

For naans, no problems! Just adjust the flour due to the consistency.

NAANS:

Ingredients:

1 cup flour
1 (2 1/2 ounce) package yeast
2 teaspoons salt
1 cup warm water
1 cup buttermilk (or yogurt)
1 egg, room temp
1 tablespoon honey
2 tablespoons oil
2 1/2cups flour
2 tablespoons butter
1 tablespoon sesame seeds or poppy seeds

METHOD:

Combine 1 c flour, yeast, and salt, in a mixing bowl. Stir in water, buttermilk, egg, oil and honey one at a time. Beat until smooth in mixer. Stir in enough flour to form a soft sticky dough. Turn onto floured surface continuing to knead in flour to make dough smooth and elastic (this may require more than the 3-1/2 c listed) 3-5 minute.

Place in an oiled bowl turning once to coat. Cover and let rise till doubled - about 45 minutes. Punch down and shape into 16 equal balls. Roll out each to 1/4 inch thickness,place on greased cookie sheet (I used my fingers and just pulled them like pizza dough), brush with butter and sprinkle with one of the seed toppings.

Cook 450 for 5-8 minutes.
the consistency will be different, sour cream might be a better choice
Not only is the consistency different but the taste will be different. Plain yogurt is not tart as is buttermilk. It depends on the recipe as to whether that taste will effect the overall taste of the dish. If you want the dish to taste more tart, and you do substitute it, you should lessen the quantity as the buttermilk would be a liquid.as opposed to the consistency of yogurt. I substitute in recipes all the time; however, when you do, remember the basic of your dish is your own taste preferences, so use common sense and your taste buds.
Like my mother always says you should not change the ingredients in a recipe. It will not be the same and it will taste different or weird. The only ingredients I do leave out of a recipe would be nuts or mushrooms because I do not like either in my food. I would use yogurt. It will give it a richer taste.
