Answer:
One of the best glutinous or sticky rice is the Thai Variety of Jasmine rice. U must also prepare the rice b4 cooking by soaking it in water for at least 4hours. I prefer leaving it overnight for best results. Cooking it in a rice cooker is not the best way to do it. Best way is to use a steaming basket, cheesecloth over a pot of water that is boiled and that actually allows the steam to cook the rice as it enters the container and leaves the container slowly giving u sticky and dry rice. This is great for making little clumps that can be touched in sauce, or spices or used for sushi.
Use arborio or sushi varieties of rice.
Do not use long or short grain "regular" rices, adn especially not converted rice!
cooking method is the same as if you're cooking regular rice. Sticky rice use glutinous rice. It's white color, you can buy in any asian food store.
niko niko rice
1 cup of rice 2 cups water
boil and then low heat cover 20 minutes
put the rice cooker away.
go back to stove top.
also do not rinse the rice.
sticky rice usually looks shorter than the rice we are used to seeing - almost round.
There's rice especially made for making sticky rice called glutinous rice i believe..i cook chinese every day so just remmeber it's always double the amount of water than rice. Hope thats not confusing.. just think 2:1. It's very very easy.
Most rice cookers are made to cook Japanese, Chinese, and Korean rice. Know that they are quite different from each other and quite different from rice you commonly find in stores (in US)
If you want sticky rice, you want either Japanese or Korean. Find them at Asian stores.
Take 1 cup of rice and place it in the rice cooker. Wash 3 times and drain well. You do NOT need to remove all that white cloudy stuff.
Add anywhere from 1 cup to 1 1/3 cup water. Exact measurement depends on the rice. You have to experiment. I'd suggest you start with 1 1/4 cup water.
If you are cooking 4 cups of rice, use 4 cups water. More rice you cook, the propotion of rice vs water reduces. The lowest you can go is 1:1.
Close the lid and push the ON button.
When fully cooked, the rice cooker will turn itself off and usually goes "ding!" DON'T OPEN THE LID!
You must leave it alone for 15 to 20 minutes while it continues to cook. If you open too early, you'll hear the popping sound and you'll notice the rice is WET.
After this period, use wooden paddle and mix by slicing motion. Be gentle as you don't want to crush the rice grains.
EAT!
Typical Asian sticky rice is a whole different type of rice that you would cook in a Rice Cooker. It's usually Steamed using a bamboo basket over low heat, Well that's the way my g/f's father has made it for 80 years, Good stuff though.
add more water
You can overcook rice easily, but I don't think that's what you mean. "Sticky rice" refers to a particular variety of rice. You need to buy "glutinous" or "sweet" rice, then cook it according to directions for using your rice cooker.
Well, I took a cooking class taught by a Japanese Resturant owner. She used short grain rice, but added ( for 6 cups prepared rice) 1T veg oil 1 T sugar 1 T vinegar. That is the secret to the rice I guess. It is so good. Try it!!
Check the Asian food isle at your local market or go to an Asian market.
