RAITA (pronounced "rye ta") is an Indian salad made with yogurt.
Raita is an Indian condiment based on yogurt (dahi)and used as a sauce or dip. The yogurt is seasoned with cilantro, cumin, mint, cayenne pepper, and other herbs and spices. Vegetables such as cucumber and onions are added. The mixture is served chilled. Raita has a cooling effect on the palate which makes it a good foil for spicy Indian dishes.
Southern Indian cuisine, such as that found in the Bangalore region, often uses finely chopped or diced carrots mixed with dahi yogurt.
This can be made with almost anything & there lots of variations:
cucumbers, tomatoes, radishes, onions, carrots, raisins, peanuts...
Raitha in some ways depends on your liking. Sometimes i make raitha with only cucumbers and plain yogurt. But if you want a good recipe check this out:

I've tried it and its very good. It all depends on you're personal preferences. One cannot mimic what is made at a restaurant but they can get very close.
Here are some variations you could try, you'll need well set unsweetened yogurt/curd.
- to the yogurt add finely chopped onions, tomatoes, cucumber, green chillies,a sprig of coriander,salt and a dash of cummin powder.
- grate bottle gourd and bring it to a boil in water, strain, cool and add it to yogurt along with salt and a little chilli powder.
- add boil and grated potatoes, season with salt and chilli powder. You could try adding chopped pineapple to this to for some variation.
- spinch can be chopped and boiled and added to curd along with seasoning.
- finely sliced onions or cucumber also make a good raita.
-remember the curd/yogurt should be firmly set and not too sour.
Mix some yougurt with water and add some cucumber and green chilies in it.Grind the mixture and addd some salt.
it's actually simple to make.
we cut up tomatoes onions some hot peppers and sometimes cucumbers and put it in the yogurt with salt and stuff.
i don't make it, but my mother does for parties. i've only watched her when she puts the veggies and salt in...sorry!

Homemade yogurt
Diced Onion
Diced Tomato
Lemon Juice
Green Chilis (finely diced)
Salt
Guram Masala (half tsp)
Grinded black peppers (few pinches)
Cucumber is a MUST
(a few smashes of garlic is good too but some people don't care for it)
The tomato and onion is optional depending on what mood your in. Some people prefer a very smooth textured raita and some like it more chunky like a salad chaat. Another tip is that if you use onion after slicing it (boat slices) rinse them in a colander and adding a bit of salt into it will make it less pungeant and tone it down a bit.
Serve your raita with chapatis, regular roti, but I prefer paratha (bread fried in pure ghee). It's absolutely heavenly! Another great side dish to serve along with the Raita is musal daahl or a mash-ki-daahl. Haleem is also very good with this but if you decide to make it with that then you'll need to use more lemon juice to compliment the spicy flavors.
I also really love pickled mango (achar mixed) along with raita and roti because it gives you a kick of saltiness/tanginess along with the cool and mild flavors of raita. A very nice combination especially on a nice hot summer day. Enjoy!
PS I wouldn't take a chance of eating raita in any Indian restaurant because they are not always the cleanest at preparing things. Unless it is a five star cuisine. Good luck but do what you like.

16 oz plain yoghurt
1 large red onion
2 med size ripe tomatoes
1/2 tsp salt
Dice the red onion (not too fine). Dice the tomatoes into 1'' pieces. Add the salt to the yoghurt and beat lightly with a spoon. Add the onions and tomatoes and mix well.
It tastes great with any kind of fried rice, pullao or tomato rice.
You can use any kind of onion for the raitha. Red onions are sweeter than the yellow variety.
Raita
1 cup yogurt
1 red onion finely diced
1/2 cup grated cucumber
2 chilies finely chopped
salt according to taste
a pinch of chaat masala
a pich of black salt (kala namak)
1 tsp sugar
Process
Mix all the above ingredients together ,can add corriander for garnish .goes very well with Biryani's and other spicy rice dishes .
