when I lived in Louisiana ,we had a "pepper sauce" it was basically a jar of peppers canned in vinegar then left to sit and flavor the vinegar - -usually only the liquid is used . It is good on beans and peas ( no - not the little round green ones)

I use Louisiana Hot Sauce when I make Tacos and also for my Buffalo wings. I live in Rochester, NY

first hot sauce is made out of pepper, you use pepper sauce to flavor some type of foods also you can put it on your food and eat it just like that,i do that sometimes.

Pepper sauce is peppers pickled in a vinegar mixture. Southerners do not eat the peppers, they use the juice over their turnip greens and kale.
I make pepper sauce. Green hot peppers and white vinegar. Pack peppers into sterile jar. Pour boiling vinegar over and seal. Let sit for 4 or 5 weeks and you got some good stuff. Pour the sauce over beans, black eye peas, greens, put a dash in veggie soup, basically if you are from the south.... honey..... you can use it on everything except cake!! Make sure there is plenty of cornbread and sweet ice tea to wash it down.
Depends if you're asking about Tabasco-style hot sauce, or that Southern vinegar-pepper sauce.
1. Tabasco-style hot sauce can be used on mangos. You peel the mango, then stick a plastic knife in the bottom to function like a Popsicle handle. Then you make slits in the mango (Start at the top and make horizontal slits. If you can visualize that when you're done, the mango should look like a pine cone, that's the effect you want.) Then you sprinkle on salt, squeeze on some lime juice, and sprinkle on red, Tabasco-style hot sauce. Yum! There are Spanish-speaking vendors who sell these on the beach at Coney Island, along with beer. (P.S. You could also make a frozen mango margarita this way, you might want to add a little sugar to the salt, lime juice and hot sauce. I made mango sorbet this way once and it was not bad.)
2. Regarding that Southern vinegar-pepper sauce, at my house we make beef stew with white wine in it, and drench it with vinegar-pepper hot sauce at the table.
I grew up in Texas, my roots are Texan, I lived for 3 years in Brooklyn, NY and ate mangos on the beach at Coney Island, and have also lived in Chicago and in the back of nowhere, California, among other places, and have traveled in Mexico a lot, and the food I cook is mostly Mexican with a little bit of Southern, little bit of Italian, little bit of Indian, little bit of this and that.

Personally, I don't like the sauces that are very heavy with vinegar.
I like Tapatio (more flavor, low heat) and Dave's Insanity (low flavor, high heat).
I use Tapatio on everything possible. Fritos, omeletes, Roscoes.
I use a drop of Dave's in a pot of stew.
I live in Los Angeles, and I am from Philly (parents are from the South).
You'll like all of them, but the best is Tabasco. It goes well in tomato juice, especially with a slug of vodka, with egg dishes and anything savoury. I live in NZ but I like American and Latino foods.

But there is one other sauce called hot pepper sauce (sauce poivre) it is brownish and French and it has those small pepper balls (u know pepper b4 they ground it). It's great with steak.
It's easy to make, you put a little butter like 2 Tbsp then when it melts you add 2 Tbsp of flour mix them up real good then add juices from the steak you have already fried and add pepper and salt and HP sauce and the pepper balls.

I prefer somewhere int he middle, which is why i like Hot Sauce From Hell and Sriracha sauce.It's good on most anything. We eat it on fried foods, eggs, soups, basically anywhere we want a little kick.
Pepper sauce is typically vinegar with small green chili's in it. It's good, but not as versatile as hot sauce. We use it most on greens.

the best hot pepper sauce is made with scotch bonnet's or halbenaro, i cook with them in my island dishes or use the sauce to drizzle over my meals to make it oh so hot & spicy.
