Muthia - Indian Light Healthy Meal:

1 medium squash, can be substituted with cabbage if preferred (bottle gourd)
2 cups wheat flour
1/4 teaspoon asafetida powder
1/4 cup bengal gram flour (besan)
1/4 cup semolina
2 tablespoons grated green chili peppers
1 tablespoon grated ginger
3 teaspoons salt
1 teaspoon red chili powder
1 teaspoon turmeric powder
6 tablespoons canola oil
2 cups nonfat plain yogurt
2 tablespoons oil
1 teaspoon cumin seeds
1. First grate the gourd.
2. Then, add all ingredients except the 2 extra tablespoons of oil. This oil is used to coat your fingers before rolling the batter into long peices to steam.
3. After mixing all ingrediants to make a thick batter, shape into long thin rolls with your fingers using the oil so the dough does not stick.
4. Then place into steamer and steam for 45 minutes or until cooked.
5. Let sit for a few hours before enjoying!
sure in india they use alot of ghee while cooking but you can borrow from the healthly parts of the cuisine without touching the ghee. try making a channa masala (chickpea in sauce) subgee (sp?) which is like curried veggies. or mutter masala (peas in sauce), bec its mostly veggitarian in a sauce thats also veggie based. for the channa use a can of chick peas (if your in a place like india where you can find fresh chick peas deff use those. and make a sauce with a can of crushed or pureed tomatoes and spices. cumin, pepper, bay leaves, if you dont follow ayervedic teaching sautee some onions and garlic and add the tomatoes to it. experiment
