Ok i have cooking trouble. Basically im white, im a gringo trying to make tortillas. I found a recipe online and i thought id try it. I had all the ingredients in my house so i did, and when they came out it was horrible. I know good mexican food when i taste it and that was not it! Anyone have a good recipe thats fool proof? I want to be able to make authentic tortillas.

.Homemade Tortillas
4 C. flour
2 tsp. salt
1/3 C. shortening
1 1/2 C. warm water
In a large bowl, combine the flour and the salt. Cut in the shortening until the mixture resembles coarse meal. Add the water and mix until doughlike.
Knead the dough in the bowl for 1 minute. Turn the dough onto a floured surface. Cover and set aside for 30 minutes.
Divide the dough into 18 balls. Roll each ball between both hands until smooth, then flatten into discs. Wrap in plastic and set aside for 1 hour. Roll out each disc to a 10-inch round.
Heat a skillet or griddle. Place each round on a griddle and count to 10, then turn over. Keep counting and turning until each tortilla has golden spots and has stopped blubbling.
Wrap in a kitchen towel, cool and wrap individually in foil and store in a plastic bag until ready to use. May be refrigerated for one week or frozen. (Makes 18)
My hubby is Mexicano... we just came back from Mexico... i watched my sister-in-law make flour tortillas... she didn't measure a thing... she used about 4 cups of self-rising flour and a tablespoon of baking powder Royale brand ( I found it in a Mexican store) a pinch of salt, and warm water about 2 cups... it was able to put my finger down in it... they warmed theirs over a fire... and lard.... she mixed it up until it was formed. like bread dough... formed balls and mashed it flat and then cooked it. no more flour was added... they did tell me that they didn't measure the ingredients out!! i hope this helps... i haven't tried it yet, but I'm guessing it's not something that comes together on the first try, maybe not even the third try. don't give up though keep adjusting your indigents!

The second thing is sopapillas are always fried they should look like a circle and are a about 3 to 4 inches across and about 1/4 to 1/2 of an inch thick.
The easiest tortilla to make is the corn tortilla.
All you need to do is mix Masa Mix, water and a tad of salt. Mix in enough water so that the mixture will hold together enough to make a small ball about the size of a golf ball. Place between two pieces of saran wrap and press it flat (works best if you have a tortilla press, but you could use a rolling pin too). Place on a hot griddle and let it brown on one side and then flip and do the same on the other side.....Easy Shmeazy!

i have an easy recipe and it makes like 15 tortillas..depends how big or small u like them.
3c flour
1/2 tsp. baking powder
1tsp salt
1/3 c shortening
1c hot tap water
well add all the dry ingredients, mix well. ( i like to use a whisk to combine the dry ing) then work in the shortening and make sure u really mix it in the the flour well. NOW THIS IS IMPORTANT: get a hand full of the mix and squeeze in your hand if the mix clumps up and crumbles easily its perfect, but if its stays together u have to much shortening in it, but just add a little more flour if that happens. then take hot tap water and add slowly add until dough comes away from the sides of the bowl. kneed a couple times and let sit for 15 minutes covered with a kitchen towel or something. then make the little balls and roll out. i recommend u also use a medium heat when u cook them, because if u use a warm it will take to long to cook and they will be hard. i hope this helps!!
Most tortillas recipes are essentially the same, if all has to do with technique. Perhaps if you have time you can post the steps you went through and we can trouble shoot for you.
Also, if we know why they were terrible, to dry? cracked apart? tasted funny? we can better know where to direct you.
At the store there should be tortilla mix... follow those directions and you won't go wrong! Also, gorditas and sopapillas are different.... sopapillas (from my experience) are basically fried tortillas that you put cinnamon/sugar or honey over... gorditas are a type of taco... but extra stuffed ina sense.... "gordita" means "fat" en espanol!
At home we eat corn tortillas, flour tortillas are eaten mostly in the northern part of Mexico.....I have no I idea how my mom makes corn tortillas but I know they're damn good....about the gorditas they are usually stuffed with meat(guisados),nopales,huevo con chorizo. Sopapillas are Tex-Mex to me cause were I come from there is no such thing as sopapillas.
