Answer:
Take a good enchilada recipe, and substitute grilled or sauteed portobello mushrooms for the meat...
Use veggies, TVP, beans, tofu
As weird as it sound, you can make them with fresh cheese, we have them like it here in Mexico.

Actually an enchilada is not made with any meat...
type in "meatless enchilada recipe" in yahoo and a lot of websites will jump up...here are a couple.
You can make plain cheese enchilada's...or you can add some vegetables that you like. I personally like the plain cheese....yummy.
Beans, cheese, onions, peppers.

Anyway, there are lots of options actually for making a meatless enchilada, other than just veggies, as I'm sure some of the answers will tell you. I love to make not just enchiladas but other kinds of dishes with something called seitan. You can find it at most health food stores. Seitan is wheat gluten and if you cook it right it has a texture quite similar to meat. It is PACKED with protein and is very good for you. You can use tofu, but many people have trouble cooking it if they don't have much experience with it. Beans are also good for texture and are very filling. The link below is my BIBLE for vegetarian cooking. I've looked up some veggie enchilada recipes for you, but take a loot around on the site for other things because it is an excellent resource. cooked spinach and cream cheese makes a great enchilada filling, also beans, plain cheese, or mushrooms (cook them before putting in enchilada, they will get really watery), Whatever sounds good to you!
