I'm in China, Hong Kong, I do not see heads of goats selling in the market. However, whole roasted baby pig is a very popular appetizer for wedding banquets, some like to put the heads of roast baby pig & vegetables in porridge or congee.
Other than heads of pigs, we also have braised big fish's head with mushroom, shredded pig, garlic and ginger. Here are some animals / parts are popular in restaurants.

tongues of ducks, pig, ox
feet of chicken, duck, goose, pig
pigeon
frogs
pig ears
pig brains
sea cucumbers

we dont eat head of goats... some people do eat goat meat... i dont eat... i eat only chicken, mutton and sea foods
Pig brains, pig feet, pif snouts and pig ears. We eat pretty much everything except the oink and thats just because we haven't figured out how yet.
We also eat goat heads here. I am originally from Jamaica. We make a soup with it.

We eat lots of store bought beef, chicken and pork. Yum!!
We eat everything except for humans, but there are exceptions where we eat people too.
Back in the olden days,and you can still get these in Amish areas in Ohio, there was Head Cheese,Vinegar Souse, and Pan Pudding, all made from the meat out of hog heads & various parts. Pickled cows tounge ,too,and fried brains..

Not me, but many people eat lambs heads, rooster's combs and horses.
Here in Jordan they do the same. I do not, I only eat the non head and non legs parts.
