Sambal is authentic Indonesian hot chili sauce. there are many kinds of sambal, am not pretty sure which one you are talking about, the one with shrimp paste, tamarind, peanut sauce, mango, or which kind of sambal.
If you go to http://indorecipe.com, type for sambal, they have several authentic Indonesian hot sauce there, but mostly in Indonesian
Here is at least one sambal recipe (authentic Indonesian esp. in Lombok and Bali)
* 4 chili of Capsicum Frutescen, grilled it
* 5 candlenut, grilled it
* 10 chili of Capsicum Annuum, grilled it
* 1 teaspoon Terasi (Indonesian hard-shrimp paste)/Belachan, grilled it
* 1 teaspoon salt; 1 tablespoon frying oil; 1/2 of lime, squashed and get the juice out
- Crushed or minced or blend all the ingredients and mix them well, give frying oil and sprikle it with lime juice, mix well.
- Serve with boiled and drained water convulvulos/morning glory/tung-choy.
and another one, also authentic Indonesian
Hot Dabu-Dabu Sauce
* 10 red chili; 2 lemons, slice cubes
* 6 shallots; 1/2 teaspoon salt
* 8 kemangi leaf (basil); 1 tablespoon lemonade
* 2 green chili
* 2 tomatoes
- Make slices to all ingredients, mix well with salt and lemonade.
Tips:
- Kemangi leaf is very common in Indonesia, the fragrant is similar to lemon but a little bit different in taste, you can eat it directly as in salad. Kemangi leaf is basil related.
- If you want a hotter sauce, add more amounts of the chili. This hot sauce is very good for grilled fish.

2 Cloves Garlic Halved
1 sm Onion Coarsely Chopped
1/4 c Sugar
1/4 c Lemon Juice
1/4 c Water
1/2 ts Salt
Instructions:
SIn a blender or food processor combine chiles garlic onion sugar lemon juice water and salt;whirl until onions are finely minced. Pour mixture into a 1 to 2 quart pan and cook over medium heat stirring occasionally until reduced to about 1/2 cup (about 10 minutes). Serve at room temperature. Makes about 1/2 cup. just multiply recipe if you want yield of more than 1/2 cup

I do too love Bali's sambal.. so yummy and the best one in this whole world :D
