I give petsaver a thumbs up. I'm an American living near Mexico City. To add my own two cents........Here in Mexico, we use all sorts of meat for tacos as well. Tongue (lengua) beef brains (cesos), beef stomach(tripe), the loose skin>beans,chicharones,meat,rice,ch... but never in my sight have i seen a bodoque (mix)! like i see here (usa)where the whole meal is put inside this grossly oversized tortilla ,what a waste of good food !!
first off tortillas..
The US version boasts crunchy corn or soft flour
Mexican tacos usually use pan fried corn which are pretty soft
Then toppings again US is
ground beef
Cheddar
lettuce
tomatoes... ( very American ingredients)
Mexican,
Asada, carnitasn lengue, cabasa.. ( Mexican variety's of meats)
queso freska or another Mexican cheese
cilantro and onion and maybe some lime juice squeezed on top
