The hugh difference ist the price,the interior (mostly very expensive and modern), the small portions but served wonderfully decorated, unusual food combinations,exquisit wine choice, very well trained/educated staff. The rest of your questions is far to long to explain,sorry. But in general Europeans are greater lovers for this kind of places.
I love Mom and Pop places, family owned for many years, they are the spots you want to hit up. None of this chain crap!
