Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

Answer:
Red lentils will always collapse when cooked. If they dont then they aren't cooked. Try using other dals such as toor ( yellow peas ), moong ( mung ) or urad if you want different results. Or use grey/green lentils ( Puy are the best ) which are not usual in Indian cooking but do keep their shape and they have a fantastic flavour.

Hi there, that is a bit hard as I would usually like them as mushy as possible LOL. However, when I like them less mushy, I usually microwave them in water (on high), and then turn to low, and check for texture every 10 minutes.
