Here is what I have found that works: You need to "bloom" your spices/veggies (curry, onion, garlic, etc.) in oil first. This means let them simmer in a little oil to bring out the curry flavor. Then continue with your recipe. Also, coconut milk is a great ingredient in authentic curry dishes. Hope this helps. :)
Buy curry powder at any supermarket.

I would advice that you purchase your curry powder at an ethnic store e.g. Mexican, Ethiopian, Indian, Caribbean - those are the places that have really great curry. Please forget about the stuff in a bottle at your local WalMart etc, those are just colored with no flavor.
I think you need a good broth plus a lot of Fresh ingredients such as onion, garlic, shallot, lemongrass, chilli, ginger etc. in making the sauce base besides the Curry Powder.
For the powder, you can try mixing your own using different spices or choose a ready-made one that has more ingredients in it (probably more flavorful then). I have seen curry powder that contains only two spices but some can have up to 4 or 5 spices plus a lot of other ingredients. So read the labels.
You need to make your own curry. Do not buy curry powder! Make your own curry using: one teaspoon turmeric, one teaspoon coriander, one teaspoon cumin, some red chillies, some crushed cardammom, some cloves, some ginger, star anise, garlic, onions. Look online and see if you can find a recipe that does not use curry powder.

get a box of spices from an indian grocery store, it will give you a recipe and the spices are already mixed use SHAN its real good
