Answer:
Use it in lemon butter for steamed oysters or to keep those huge 'white fish' filets and tuna steaks moist while broiling. That lemon butter would also be awesome on rice just plain or with Kikkoman teriyaki sauce. Almost any recipe calling for lemon juice or zest can use lemongrass... maybe even desserts?
mmm.. you should try it on chicken.. like a grill seasoning.

Be advised that I used powdered lemon zest from Penzey's in two deserts before I tasted it. It ruined them both!

Get fresh lemon grass. You can plant pieces of it and it will grow like a weed.
like Slick said, you can make a tasty hot beverage. put a teaspoon in a cup and fill the cup with boiling water. add a teaspoon of sugar.
