Answer:
Ingredients

1 cup bengal gram flour
2 medium sized onions u may use less
1/2 tsp paparika powder or red chilli powder whatever u can have
salt to taste
toast 1 tbsp of cumin and 1 tbsp of corainder seeds and grind them coarsely
mango powder ( not essential as u may not find this sometimes)
and
if u want some zing 2 cloves of garlic crushed nicely
half bunch fresh corainder leaves or flat leaf parsley

use water to mix add gradually into a thick but flowing consistency but thicker than custard ,then add 1/2 tsp of soda bicarb or baking bowder, leave it to rest for some 20 minutes
deep fry pour about a table spon sized dollops .
and half fry then take out slit then apart and then fry again fully this time this process makes them more crisp.

There are so many veggies u can add to this usually used are aubergines , spinach , cauliflower and green peppers .usually sliced in 1/2 inch thick slices.

Also serve this with , mint chutney mix one bunch of mint with half bunch flat leaf parsley ,blend them with some salt and pepper.

also nice is Tamarind sauce

1 cup tamarind extract , and then add some 2 tbsp of jaggery of brown sugar , cumin and some red pepper or a whole green chilli , whiz it in a blender , u can omit chilli.

A couple of tricks -

If you add baking soda or 'Eno' salt, it can be crispy and absorb less oil.

Pakoras can be made of spinach or onions or even an assortments of vegetables.

You can also add a variety of stuff to add a zing - roasted cumin, chopped garlic and ginger tot he batter or sprinkle rock salt/ chaat masala on top.
1. Add minced meat to the batter (beef, chicken, fish or shrimp)

2. Add chopped coriander to the batter

3. Add julienned lemon zest to the batter

4. Serve it with Mango Chutney
u culd add coriander leaves to the pakoras.. add a drop of lime
