add additional veggies... onions, shiitake mushrooms
Other additions... bleu cheese, gorgonzola, cambozola
I personally would avoid adding broth or anything that's already salted. Stove Top Stuffing just seems too salty to start out with.
I recently went to a high end restaurant where they had as a side dish savory Cambozolaa bread pudding... which turned out to be stuffing with a bleu cheese.

i make mine with chicken broth instead of water and add broccoli and sprinkle a good grated cheese after i finish cooking it.
sautee diced apples in butter and little brown sugar when they are soft put them in stuffing this stuffing goes really well with pork chops

I take chicken broth and boil those ingredients until they
are soft. Add a large tablespoon of butter.I use garlic salt and pepper for more flavor. Use
the chichen broth instead of water. Cook it on the stove and when its done put it in a dish and put it in the oven under the broiler until the top is crisp. Yummm
I'm guessing that you are using a packaged stuffing mix. Those are very good.
I do this to spice it up: In a separate pan saute mushrooms (can type are OK), some chopped garlic and onions, 1/4 pound of sausage or hamburger. Add two tablespoons of flower and enough water to make a gravy. Don's add salt!
Place the cooked stuffing on a plate and pour the gravy over the stuffing. It's a meal by itself.
You can add salt and pepper to taste.

Stove-Top Stuffing
Instead of following the directions on the box, use 2 tablespoons of butter or margarine to sauté some added vegetables (like 1/2 cup chopped onion, 1/2 cup finely chopped celery, 1/2 teaspoon minced garlic, and 1/2 cup finely grated carrot). Then add the seasoning packet and 1 3/4 cups water and bring to boil. Cover, reduce heat to a simmer, and cook 5 minutes. Remove from heat, stir in bread cubes from the mix, cover and let stand 5 minutes
Add some fried sausage and sauteed onions and celery seed.
Add chopped chicken or turkey to it, low sodium chicken broth rather than water to make it (using reg. salted broth will make it too darn salty!), and some freshly sauteed onions, celery, carrots....
Add grated parmesean cheese and top with gravy!
Buy a box of corn bread, and follow directions and bake, also 1 can of chicken broth, and a gravy pack. Once corn bread is ready, i would finely chop a few chicken gizzard, celery, add a little all-spice seasoning, a few onions, some green peppers, put a small amount of oil in a small frying pan and cook those ingredients together. After the corn bread is ready, you crumble it together, and mix together all the ingredients you cooked with chicken broth, and 1 egg. Mix together really well. And then put back into the oven to bake for about 20 min. and serve with gravy.
Add oysters, sausage or even seafood (crab,lobster) or try spicing it up with red pepper. I mess with stuffing alot and have done this many times and it is good, BAM!
