I'm looking for a recipe made from scratch.
Answer:
RECIPE INGREDIENTS
1 cup dried peeled fava beans (7 ounces), soaked overnight
3/4 cup dried chickpeas, soaked overnight
1 small onion, finely chopped
1/3 cup minced flat-leaf parsley
2 tablespoons minced cilantro
1 garlic clove, minced
1 teaspoon baking powder
1 teaspoon kosher salt
3/4 teaspoon ground cumin
Pinch of crushed red pepper
3 tablespoons water
Pure olive oil or canola oil, for frying
Tahini Sauce (see recipe)
RECIPE METHOD
Drain and rinse the favas and chickpeas and put them in a food processor. Add the onion, parsley, cilantro, garlic, baking powder, salt, cumin and crushed red pepper. Pulse, scraping down the side of the bowl, to form a coarse paste. Add the water and process until the mixture is gritty but fine and brilliant green. Scrape the paste into a bowl.
In a medium saucepan, heat 2 inches of oil to 350 degrees F. Scoop rounded tablespoons of the falafel mixture into the hot oil and fry in small batches until browned and crisp, about 2 minutes. Drain on paper towels set over a wire rack and serve hot, with Tahini Sauce.
Personally: I eat Falafel in a pocket Arabic bread sandwich, and I add Arabic salad and red chili

Here is an authentic middle eastern falafel recipe.
I love falafel!!
Don't forget to read about the McDonalds version!! That's Great!
Hunter2's recommendation is pretty good. Close to mine. For the oil, use sunflower or safflower oil. Regular veggie oil is too greasy.

soak in plenty of water overnight broad beans ( fava) and chick peas.( 1 cup of each)
the next day put in food processor with 1 onion, 2 cloves of garlic, salt pepper and dried coriander ( you can use green if you can't find the dried coriander but it's not the same) and a pinch of bicarb.
grind them all well, makr small patties and fry in hot oil.
here's my favorite spicy falafel recipe
1 tin of chickpeas (garbanzo)
(you can also use dried beans soaked overnight or broad beans aka fava beans or a mix of both)
1/2 onion chopped
4 tbsp chopped broad leaf parsley
(or half and half parsley coriander leaf aka cilantro)
1 tsp salt
3 cloves garlic finely chopped or crushed
1 tsp ground cumin
1/4 tsp dried chili flakes OR a couple of good shakes of cayenne
4 tbsp rehydrated bulgur, drained
2-3 tbsp plain flour
squeeze of lemon juice
optional sesame seeds
vegetable oil for frying
Add chick peas, onion, garlic, herbs, spices and salt to a food processor and process coarsely, don't turn it into hummus!
Sift in flour and baking powder, add bulgur and lemon juice.
Pulse until you start to get a dough ball, again do not over process.
If the mixture is too dry add a little lemon juice, too wet add a little more flour or bulgur. The mixture should hold together well but not be too sticky.
Refrigerate for 1+ hours.
Form mixture into balls the size of small walnuts.
Option: roll them lightly in sesame seeds.
Fry in oil @ 350-375. They sould be quite dark and crunchy on the outside but moist and soft inside.
If the balls fall apart process a little more adding a tbsp flour.
Serve with some taratour bi tahini
2 cloves garlic
1/2 tsp salt
1/2 cup tahini
1/2 cup lemon juice
1/4-1/2 cup water
add garlic, salt and tahini to processor and process adding lemon juice and water alternately until desired consistency
(fantastic on deep fried cauliflower florets while you've got the fryer out)
All the recipes are great but if you need a little more help then go an Indian grocery store and they have the falafel box ready you can always mix that and make it out of it...when you are in a hurry...
