Now a days in France, Germany and other EU countries they use plexi glass and feed the snails a mixture of foods to help them grow, years ago most were pests and found on vine leaves, the vinters used to destroy them now they are a commodity, I had when in France what looks a bit like white caviar, it was snail eggs, a delicacy now.
To produce them in North America or anywhere, you would be best to find a market, like any food there has to be a demand, the ones in tins at the grocery store are mostly from Taiwan or Hungary, the best are still from France and are very easy to find. But to grow them your self they are like chickens they need everyday attention, I am not saying it is impossible but it could be an expensive undertaking, and take time to get a "crop" of snails for sale.
But if your determined, check out how to get your "seed" snails. like chicken they lay eggs and are hatched, a good size snail is ready for market in less then one year, they are asexual, so you do not need male and female, they have both organs.

i didnt know ppl eat snails. this a special kind of snail or sumthing? sounds pretty nasty but since its french cruisine i gotta try it.
