Jhaal Muri Recipe
Ingredients
Muri (Puffed rice)
Boiled Potatoes
Chopped Red Onions
Chopped Cucumbers
Chopped Fresh Coconut
Chopped Tomato
Roasted Peanuts
Sev (Bhujia)
Mustard Oil
Salt to taste
Muri Masala (available in speciality shops)
Chopped Coriander Leaves
Very fine chopped green chillies (optional)
Lemon juice
Preparation
Chop the boiled potatoes finely. Similarly chop the red onions, cucumbers, coconut and tomatoes.
The chillies should be chopped very finely and de-seeded.
Chop the coriander leaves.
Method
For per person take about 2-3 cups of Muri and add about 1 tbsp of chopped potatoes.
Sprinkle a little salt, half a tsp of muri masala and 1/2-1 tsp of mustard oil.
(All the quantity of ingredients in this recipe can be adjusted as per personal liking).
Stir very well.
Now add all the other ingredients (approximately 1tbsp each or) as per taste, and stir again.
Sprinkle with fresh coriander leaves and a little bit of the sev and serve.

Kopir Muri Ghanto
Ingredients:
Medium sized Cauliflower 1
Rice (washed and drained) 1 cup
Turmeric Powder 1 tsp
Chilli powder 1/2 tsp
Cumin powder 1 tbsp
Coriander powder 1/2 tbsp
Garam Masala 1/2 tbsp
Bay Leaves 2
Oil 8 tbls
Ghee 1 tbls
Water 1 cup
Sugar 1 tsp
Salt To taste
Method:
cut the cauliflower into small pieces. Heat oil in a pan and fry cauliflower pieces until golden brown. Remove from pan.
Fry all the spices except garam masala and bay leaves for a minute then add the rice and fry for 5-6 minutes.
then add three cups of water, sugar and salt. Bring it to boil then lower the heat and cover the pan and simmer until rice is nearly cooked.
Add the cauliflower. Mix well, cover and cook for several more minutes. By this time rice and cauliflower should be well cooked and it should not be dry like plain rice. sprinkle the garam masala powder and mix well.In a separate pan, heat ghee and fry the bay leaves for a couple of mins. Pour over cauliflower-rice mixture. Serve Hot.

Puffed rice 4 cups
Sev 2 cups
Onion 1 no finely chopped
Tomato 2 nos finely chopped
Mango 1/2 cup finely chopped.
Tumeric 1 tsp
Carrot grated 1/4 Cup.
Cucumber 1/2 Cup finely chopped.
Potatoes 2 nos boiled,peeled & cubed
salt,chilli pwd acc to taste
Green chutney
sweet chutney
Methods :
For Green chutney:
Cilantro 1/2 bunch
green chillies 6 nos
potato wafers 1 tsp
salt & lemon juice.
Blend all the above to a fine paste & reserve.
Sweet/sour chutney:
Tamarind extract 1 cup
Pitted Dates 1/2 cup
Brown sugar 1 Tbsp.
Cumin Powder 2 tsp.
Chilli Powder 2 Tsp.
Salt Acc to taste
Boil the above till they reduce by half & cool.
Grind it to smooth consistency.
For Bhel poori:
mix all the ingredients & serve in an individual plates
immediately.In case of entertaining keep everything
seperately in individual bowls & let the guests mix
them by themselves.
As you can see, this is the one with the puffed rice.

Anna has the best answer. also, u can "dry" frying the rice. Just heat your sauce-pan, then throw in the rice grains. make sure its all in one layer, and keep plenty of space for "popping"
