Persian spices are similar to most Middles Eastern, some different spices are sumach a tart fruit from the Sumach bush, But mostly Garlic, Oregano, Sesame seeds or paste, they use rose petals and rose water, fennel seeds, olive oil and if you use any acidic things like lemon, lime or orange juices, red wine vinegar or pomergranate juice.

check out these websites for recipes, usually I find things on foodtv.com but there was nothin' on this.
I tried looking for the special spice mixture that I use for kebabs(couldnt find it), but usually at ethnic stores you can find the blend called kebab blend, sorry... also this website has some middle eastern recipes...good luck!
go to an indian store and buy "garam masala" that'll be something like allspice. grind it well and when u mince the stek put that in too.
one more thing u can do is buy indian gram at indian stores( u may find it elsewhr too) soak it in water overnight grind it to a paste in the morning and add it too the mince. it remains firm but soft all thru.
u can also make a paste out of ginger and garlic. add the juice of freshly grated onion to it. then marinate the steak in that. dont forget to put turmeric powder all over the steks first. u can add lemon juice in the marinade too.
u can use this to marinate pieces of chicken or mutton, skewer it and grill it.
Will taste like a dream..take it from an indian who knows how to make it well...
