My mom and I love lumpia (hopefully you mean lumpia shanghai)! Sorry this is not that informative, but I am, after all, just a kid.

We put ground pork and bean sprouts and a bag of those vegetables that are labeled coleslaw. First you need to fully cook the ground pork, then put into a sieve so you can drain out the excess liquid, then put in bean sprouts and coleslaw vegetables. Mix thoroughly and then wrap with the egg roll wrapper then fry until golden brown.
My mom doesn't make any special sauce; I just mix soy sauce and vinegar with a dash of pepper,>------------------------------...

Ingredients:


1 lb ground beef
2 cloves garlic
1 large onion
1 can (8 oz.) water chestnuts, slivered
2 pkgs (10 oz. size) chop suey vegetables.
1 1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon patis
2 tablespoons flour
1/4 cup water
40 lumpia wrappers
deep fat for frying
3 cloves garlic, minced
1/4 cup vinegar
1/8 teaspoon salt


Procedure
Brown beef well. Stir in garlic and onion; saute lightly. Add water chestnuts, vegetables and seasonings; cook for about 2 minutes. Drain and cool throughly. Combine flour and water to form thin paste. To make rolls, place 2 tablespoons filling on a lumpia wrapper. Fold neatly like and envelope. Seal with paste. Head deep fat to 375 degrees F. Combine remaining ingredients for sauce. Fry lumpia in hot fat until golden brown. Serve hot with sauce. Makes 40 lumpia.

Lumpia-Stuffed Wrappers (Lumpia Labong):

1? hours 1 hour prep
15 rolls

2-5 tablespoons vegetable oil
2 garlic cloves, finely chopped
1 medium onion, finely chopped
1 cup diced pork, cooked
3/4 cup shrimp, peeled, chopped and cooked
1/2 (18 ounce) can bamboo shoots, cut into julienne strips
2 cups Chinese cabbage, shredded
1/2 teaspoon salt
1 cup fresh bean sprouts
15 philippine lumpia skins (can use spring-roll wrappers)
1 head lettuce (separated into leaves)
peanut oil (for frying lumpia)
Lumpia Sauce
1/4 cup cornstarch
1/3 cup packed brown sugar
1/2 cup soy sauce
1 1/2 cups water

1. Prepare sauce: Combine all sauce ingredients in a small saucepan. Stir over medium heat until slightly thickened.
2. Heat 2 TBSP oil in a wok or large skillet. Add garlic and onion; saute until transparent. Add pork, shrimp, bamboo shoots, cabbage, and salt. Stir-fry 2 to 3 minutes, adding more oil if needed. Stir in bean sprouts; keep warm.
3. Keep wrappers covered until used. Top each wrapper with a lettuce leaf and 1 to 2 tablespoons filling; fold end of wrapper over stem-end of lettuce. Roll wrapper and filling, with some of the lettuce and filling extending from open end of wrapper.
4. In wok or skillet, heat about 1" of peanut oil to 375oF. Fry lumpia, 2 or 3 at a time, until golden brown, turning frequently. Drain lumpia on paper towels.
5. Arrange filled wrappers on a platter. Serve with Lumpia Sauce.
