    How do I use kombu to make Japanese rice?

Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

I want to make gohan like I remember eating in Japan. Where do I buy kombu and how do I use it?

Answer:
It is a strong flavour if not used correctly, the best way to use and if you have a rice cooker is, to measure your rice and water, no salt as the kombu a bit salty, add a 1-1 1/2 inch piece to the rice and let it cook, make sure it stays on the top.

If you doing it on the stovetop, measure your rice and water separatley, bring the water to a boil add the piece of kombu, shut off the water, let it sit for 10 minutes, then add your rice, but remove the kombu, cook until you like the consistancy, I like to bring it to the boil stir it once then leave it alone, the starch will not make the rice sticky then, put a lid on it, and turn it down to the lowest setting and let it go for 15 minutes, check it after that, take it off the heat, then I take a paper towel put over top, and let it rest for 10 minutes before serving, this allows the starch to setup and reabsorb, like a steak off the grill.

I often use kombu with my rice, I buy it at a health food store in Toronto ON Canada, also make sure you get a good brand of short grain rice, not Italian risotto style as it is to starch, most stores now sell a sushi brand it is the best for both eating and making sushi.
