I love the taste of plain, regular porridge. I make it with milk rather than with plain water, though. It gives it a better flavor. Just add a little salt as well, and then a little butter that melts in the middle is nice.
For a bit of variation, try sprinkling some cinnamon and sugar on top.
Being Scottish....it use to be a wee bit of salt...but my Gran used to put a bit of milk or a smiley face made from sugar on it before I went to school...or hunny...

First make it with either all milk or half and half. If you are worried about weight and cholesterol then use skimmed or semi skimmed milk.
Before cooking add half a thinly sliced banana and stir in. Stir in again at halfway stage.
Another is stir in half a teaspoon of honey. Half is quite enough as the flavours are then suttle. Or sprinkle on when cooked, some ground nutmeg. Not too much though as it could spoil the effect. The aroma you get is wonderful.
Do not add salt as it is bad for you as is sugar.

Either masses of sugar OR Golden Syrup. Nothing else is sweet enough!

Just for info, we normally eat our porridge with steam or fried fish and vegetables, soya sauce or soup on the side (chicken, fish or vegetable). Some eat it with salted fish or salted eggs, while others eat it with peanuts and fried baby anchovies.

When I'm lazy, I cook the oatmeal with water (on the stove of course) for about 20 minutes, then add milk, bring to boil, then add an egg and honey. Other then oatmeal, we (Chinese) refer rice porridge as congee, here is a brown rice congee recipe.

80g of Brown Rice, soaked in 500 cc of water overnight to make it soft
100g of Jasmine Rice (raw)
2 slices of ginger, crushed
1 slice of dry orange peel (chinese herb), soak in water - optional
300 g of pork, cut into bite size (or chicken)
2 liter of water
salt
1) Heat a pot with water, boil pork for 2 minutes, then wash under running tap water for 2 minutes, to clean blood and fat)
2) Heat a big pot of water, put all the ingredients into the pot when the water is boiled, reduce heat to medium, cover the pot and let it boil for half an hour then reduce the heat to low and simmer for 1 hour or until congee is thick, stir occasionally. Boiling time is subject to how thick you prefer your congee to be.
3) Add sea salt to taste, serve with Chinese pickles or other meat dish or vegetables.
Sometimes I add meat into oatmeal, here is my recipe

120 g oatmeal
250 cc non-fat hi-calcium milk
800 cc water (depends on how thick you like it)

1 egg, beaten
1/2 teaspoon of seasalt
white pepper
1) Boil the oatmeal with water in a cooking pot for about 15 minutes with medium to low heat, stir occasionally
2) Add milk to the oatmeal, bring to boil again and stir till it is nice and thick
3) Stir in the minced pork and cook for about 2 to 3 minutes
4) Add egg into the pot, turn off heat, stir quickly to make egg drops, add sea salt and white pepper to taste.
5) Pour oatmeal in serving bowls, sprinkle chive / green onion.
6) Serve with Chinese or Japanese pickles or some roasted peanuts.
If you do not like pork, you may change it to minced chicken or beef.
