Mike said: oh,no,you are wrong.I have found as below for this question(How do i make mexican ceviche?),it will help you,my kids.

Answer:
I don't know about mexican ceviche but the ceviche I know is any fish or shell fish that is cooked by an acid (lemon or lime juice) or even vinegars. You can add extras like capers and onions to enhance the flavors.

The acid is the means of cooking. Place your seafood in a bown and add the acid and other ingredients and cover tightly and let sit for a minimum of 8 hours. If done right ceviche is very deliscious.
I LOVVVVVE ceviche. The recipe I use is at the website below. Please feel free to try it, it's not difficult at all.

Now that you mention it, it has been a while since I have made ceviche. Gee thanks! You've gone and given me a craving at the beginning of my day! :)
Ceviche

This is about as traditional as you can get

Ingredients
4 fresh limes
1 fresh lemon
1 lb Bay Scallops
1/2 medium red bell pepper, finely diced
1 medium red onion, finely diced
1 fresh chili, seeded and minced
1 clove garlic, minced
1/4 cup chopped fresh cilantro
2 tablespoons extra virgin olive oil
coarse salt
zest from 1 lime and 1 lemon, julienned
blue corn tortilla chips, for serving

Method
Squeeze 1/2 cup lime juice and 1/4 cup lemon juice. Combine citrus juice and zest, scallops, peppers, onion, chile, garlic, cilantro and oil in a mixing bowl. Marinate at room temperature, stirring occasionally, for 1 hour. Refrigerate covered for 1 hour. Remove zest from ceviche and season to taste with salt, if needed. Garnish with julienned lime zest. Serve with blue corn tortilla chips.
