The reaction of the leavening produces air - in the form of bubbles which rise to the top of the batter and burst as they are heated, leaving a hole.

Pancake batter will do the same if you don't flip them when the bubbles rise and break. A crumpet is like a thick pancake, cooked in a ring form.
the baking powder in crumpets causes a chemical reaction with the liquid thus the little holes.
(its the baking soda reation that causes airbubbles to form in the batter)...by taking a straw and blowing into the batter!
