I just bought some Jiló at the Brazilian market. Do you eat them green or wait until they turn orange or yellow? Any favorite recipes or cooking techniques?

you can wait till its ripe or you can sautee it with zuchinni,tomato,redchilli and bacon.it will be good for sure
I'm brazilian and i'll give the recipe i like most.....
first you cut the jilo in thin(2mm) longitudinal parts and put them on water(so they don't get darker)....
then you cut onion rings and cook them with olive oil till they get golden colour....
them you put some butter and let it melt and put some spices you like....
them you put the jilós and let it cook untill they get flexible.....
jiló is very bitter.... depending on the way you cook it....this way it will not be so bitter and you eat it green...if it turns yellow it's not good to cook anymore....
it's been a long time since i last ate jiló... i'm going to buy it right now....
