Whenever I go to a Spanish restaurant they have the tastiest pork chops. I love the flavor and they aren't greasy either. Anyone the process for cooking them and the seasonings they use?

Answer:
I am Puerto Rican & the way I make all of my pork is with a garlic and oregano paste.

Depending on how much meat you have...

Take a few garlic cloves (last night I used 4 cloves for 6 chops) add 2 tsps of salt 1 tbsps of oregano & 1 tbsps of olive oil

Throw all of that in a food processor or mash it together on your own.

Sprinkle the chops with a tiny bit (optional) of all purpose seasoning. Then rub the paste all over them and broil or sautee (they will be jucier if you stautee) until cooked through

I would soak (brine) the porkchops in 1 gallon water with 1/2 cup sugar and 1/2 cup salt in the refridgerator for 4-6 hours before. Drain and pat dry. This will make them so tender!

Season with garlic salt or garlic powder, salt, and pepper.
Fry or broil till no more blood comes out of the top, about 5-10 minutes each side depending on thickness.
Think garlic! A seasoning product called "Adobo" made by Goya is a great way to get that Spanish flavor. Sprinkle generously, rub into meat with a little Goya olive oil as well. Let sit for minimum of 1/2 hour but overnight is best. If you are willing and able to do it from scratch which is ideal: Crush a head of garlic, add a little oregano, black pepper and Goya olive oil and rub the seasoning on the meat.

For frying, grilling, baking etc, the trick is to get the temperature just right - especially the internal.
