    How do you cook egg fried rice like Chinese people do?

Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

Answer:
First boil the rice, this needs to be done at least 4 hours before you want to fry the rice.

Set aside to cool.

Chop up a couple of spring onions, separating the white & green parts, lightly wisk 1 egg.

Pour some oil in the wok and once hot add the white part of the onions and the egg.

Let the egg just set on the bottom, then add the rice, stir fry unitil the egg is well mixed and the rice is heated through.

Finally add the green spring onion and a dash of soy sauce.

preheat till really hot then fry
cook the rice as normal. heat some oil in a frying pan and throw in the rice. add an egg or two and stir to break up the egg. add a bit of soy sauce, give it a stir and there you go! you could always add some spring onions, prawns, bits of chicken, or whatever too.
You don't, you go to the local chinese takeaway and buy it, cause no matter how hard you try it'll never taste as good as the real thing!
make sure your rice has gone cold ,then put your wok on cooker put in 4tbs of oil more if it for more then one person then start adding your rice, crack to eggs beat them an pour in wok ,start turning your rice around till eggs an rice evenly cooked then chop one spring onion up an put in salt an after you put it on plate sprinkle soya sauce on .an enjoy.
EGG FRIED RICE

1 tablespoon peanut oil
4 large eggs, lightly beaten
4 cups cold unsalted steamed white rice
3/4 teaspoon salt
1/2 cup thinly sliced scallion greens (3 to 4 scallions)
1 to 2 teaspoons Asian sesame oil

Special equipment: a well-seasoned 14-inch flat-bottomed wok

Heat wok over high heat until a drop of water vaporizes instantly upon contact. Add peanut oil, swirling to coat wok evenly, and heat until hot and just smoking. Add eggs, tilting wok and swirling eggs to form a thin even layer on cooking surface, and cook 30 seconds, then add rice and salt and stir-fry, breaking up eggs and letting rice rest several seconds between stirs, until rice is hot, 2 to 3 minutes. Add scallion greens and sesame oil (to taste) and stir-fry until combined well.

I myself is chinese, i will tell you how to make very simple egg fried rice because there are lots of kind, First i am going to tell you the things that you need;

oil
egg for sure lolz
steamed rice for sure
finely chopped onion
onion's leave or spring onion
little bit of soy sauce and some salt and peper to taste (we dont really use pepper but for taste you can),

heat the oil for 1-2 mins, oil depends on how much u want to make, fry the eggs do scrammble it make them tiny
add onion or spring onion and fry them for 2 - 3 min
add tiny bit of soy sauce stir it for 1 min, add salt and pepper for taste also depends how much your making, and then finally add steamed rice, stir them for around 2-3 mins and that's it's your done for your simple chinese egg fried rice.

You fry the rice after cooking it and just before serving add a beaten egg. Stir rapidly and serve
2 tbsp. oil
2 tbsp. chopped scallions
1 lb. raw med. shrimp ( cleaned)
1/2 lb. mushrooms, sliced
1 1/3 c. Minute Rice (long grain)
2 eggs (scrambled into sm. pieces)
1 c. ham strips
1 1/4 c. chicken broth
1 c. cooked peas
1 tsp. soy sauce

Heat oil in skillet. Add scallions, shrimp, mushrooms and long grain Minute Rice (right from the box). Saute until shrimp are pink. Remove from heat. Stir in eggs and ham. Bring remaining ingredients to a boil. Stir into rice mixture. Because you don't boil Minute Rice first, it can capture all those tantalizing flavors. Cover and let stand 5 minutes. Stir before serving. Serves about 4.
An easy way is to cook your rice. Season it with whatever you like such as butter, chopped green onion, green peas, chicken stock, black pepper, MSG, etc.

Scramble one or two eggs in a large skillet. Break these into little bits, add some sesame seed oil (optional), soy sauce, thrown in your rice, heat and mix it all up. A nice touch would be a few fresh mung bean or soy bean sprouts either on top or mixed in.
