Either one can be used to season beans. Either great northern or pinto beans simmered all day with either a ham hock or neckbones makes a deliciously flavored meal.Especially good served with fresh baked corn bread.

Ham hocks and neck bones can be used for cooking soups and stews. Ham hocks give black-eyed peas and mustard greens a delicious flavoring, both are traditionally southern dishes served on New Years day to bring luck and wealth. If you are serving turkey for your Christmas or Hanukkah meal you can save the bone then cook it down to make a broth that you can freeze for a later time. The same goes for a ham with a bone in it. I love them cooked slow with a gravy if you are not talking about the smoked hamhocks or neckbones those are used for seasons in greens and beans. The fresh once if you wash them and put them in a soup pot with bellpeppers and onions.... garlic and an other vegetable that you my like, add enough water to just covet them and let them cook slowly until they become tender and don't forget to add your seasons about 30 min. after you have put them on the fire. Once they are completely cooked it time to make the Garvy. This is made with flour and hot water.... mix 1/2 and 1/2 in a cup and them add it to your meat. cont. to do this until you reach your desired thickness. Happy eating "Soul Food Kitchen"
