Selection & Storage: Good-quality sugar cane will be firm, and the brown bark will be smooth and unblemished. Sugar cane can be stored in the refrigerator for up to six months.
Avoid: Avoid product that is soft or has spots of mold on the bark. Mold on the ends can be cut off.
I just dive in and pig out. But I dont think that is the proper way.
I lived in southern Florida when I was a kid and it grew wild in some places. We used to just tear off the outer part and chew on the inner (read clean) section. It's too tough and fibrous to eat so we just chew the cane juice out of it.
In Mexico, we peel off the outer layer. Then we cut the sugar cane in small round pieces approx 1/2 an inch. We add lemon and chilly powder. And we just chew it and suck out all the juices out of the cane and then discard it.

I've only had good sugar cane experiences in India. Since a sugar cane is really long you get it cut into about 1 foot long peices and peel the outer bark with your teeth and then rip of small enough peices and suck the juice. However if your looking for another way to enjoy sugar it is makeing a juice out of it. Put about half a lemon and a lil bit of giner into one glass and it is soooo goood. Make sure you have run the juice through a cheese clothe or something so you get all the little peices of sugar cane out.
I live in Louisiana and we would eat it like candy. You just peel away the bark and cut the inside into smaller pieces and chew it until the sweetness is gone and spit out the fiberous remainder.
Wash the cane to remove any dirt. Then, using a sharp knife or machete peel off the outer skin or bark. If the cane still has leaves, cut them off first, being careful to avoid the prickly hairs near the base of each leaf. The can make you itch like the dickens... After you remove the skin, you will see that the cane has long and short bands across its length. The shorter bands are nodes (or something like that, I think) and are very hard and fibrous. The longer segments in between the nodes are more edible. What we do is cut the cane up and discard the nodes, leaving cylinders of the segments that we slice lengthwise into more manageable pieces, usually 6-8 wedges.
You chew on the pieces, suck out the juice, and spit out the fibrous remainder. I like to refrigerate them for a while before eating. Enjoy!
