This is a favorite Mumbai snack, I love frankies!
Anyway, there are lots of variations. It's basically an "Indian burrito" made with chapathi or roti that's stuffed with a variety of fillings and then pan fried in butter or ghee. The fillings are usually chicken, egg, paneer, vegetables, lamb...


MUMBAI CHICKEN FRANKIE

Ingredients

1 serving (2 frankies)

Stuffing:

2 chicken thinghs (boneless and skinless)
1 small onion, finely chopped
1 tomato, finely chopped
1 green bell pepper - seeded and diced
2 cloves garlic, finely minced
1" piece of ginger, peeled and finely minced
2 fresh green chilies, finely chopped
? tumeric (haldi powder)
? coriander powder
? tsp red chili powder powder, or more to taste
1 tsp cumin powder
1 tsp garam masala
salt to taste
juice of 1 small lemon
egg, lightly beaten
oil (veg or canola) or butter
freshly chopped cilantro leaves
freshly made chapthis or rotis

Method

Cut the chicken breasts into strips and pan fry until golden brown and delicious. Set aside to cool, then coarsely chop.

In the same pan, add a little oil (if needed) and stir fry the onions, ginger and garlic. Pan fry until slightly browned and add the green chilies and the spices. Add the bell pepper and stir fry 3-4 minutes. Then add the tomatoes, salt and the chicken. Stir together to combine well and add the lemon juice. Add the cilantro leaves and set aside to cool.

Add a few spoons of stuffing in a chapthi or roti and roll to close. Do not overstoff, use a beaten egg to seal the closing edge.

Heat a little oil or butter in shallow pan and fry until golden brown on all sides, drain and serve with your favorite sauces or chutneys.
Makai Frankie

Ingredients

For Pattice:

Corn Kernels - 1 cup
Boiled Potatoes - 2 nos
Ginger-garlic paste - 1 tbsp
Green Chillies -1 tsp
Red chilli powder - 1 tbsp
Haldi - 1 tsp
Jeera powder - 1 tsp
Salt to taste

For Frankie:

Maida - 1 cup
Water
Oil
Salt to taste

For chutney:

Mint leaves - 1/4 cup
Cilantro - 1 cup
2-3 chillies .
1/4 tsp Jeera
Salt as per taste


Method For pattice:

Boil corn kernels (you can use fresh corn too, boil it and remove kernels)
Mash the kernels very well some kernels remain its ok.
Add boiled potatoes, paste and spices .
Take the mixture and make small pattice out of it and shallow fry them and keep aside.
Method For frankie:

Make a dough of maida salt and water as of chapati dough.
Roll into small chapatties
Roast them on a tava on both sides u can prepare them ahead of time and preserve.
You can also use tortillas if u want.
Method for Chutney:

Prepare mint chutney by mixing chutney ingredients and grinding it.

To make makai frankie:


Take a roti and spread mint chutney on it .
Place 2 pattice in between mash a little and some chopped onion (if u like)
Roll the roti by joining both ends and shallow fry them till its crisp on both sides .
While serving cut the frankie in between and serve with chutney.
You can also serve it with tamarind chutney and u can eat the pattice alone also.

Frankie's are an excellent way of using left overs,in every Indian home there are rotis,vegetarian or non vegetarian curry left overs,also some t ype of chutney ,these are always available,serve up hot tasty snacks by spreading chutney,followed by the curry ,roll up & shallow fry in a pan with oil or butter on a medium flame till brown & crisp.A mashed potaot or two makes a gravy thick enough to manage,
