I don't know: just like a regular chicken pie? All I know is that you cut up the kidneys (beef or lamb), trim 'em and wash/soak in three changes of slightly salted water. Reason: if you don't rinse them well they'll taste like a piece of old toilet. As all organ meats they are good eating, as witness carnivores in the wild going for the organs first. Funny thing: a local market sells organ meats from the 'offal' counter, which is the busiest of the meat dept.
