The other day I tried to make chinese fried rice. The kind that is not too soft like regular plain rice. First I boiled the rice, then I fried it in a wok with vegetables and oil but the rice came out really soft. How do I make it a little crunchy like in the chinese restaurants?

Answer:
the best way is to use day old rice that's dried out in the fridge a little. or if you need it right away cook the rice al dente by going easier on the water. It'll get enough moisture from the oil, soy sauce and veggies.
use soy sauce to fry, not oil. i know it sounds odd, but that's how you get the color, and it "dehydrates" the water from the cooked rice, because of the sodium level in the soy sauce. also, adding scarmbled eggs is a great addition, and is more "authentic" flavor.
After u boil the rice strain it with a sieve so that there is no water left and rice should not be fully boiled (slightly less boil).Then in wok add oil ,vegetables fry only till they r crunchy and add soya,tomato and chilly sauces,ajinomotto(optional) and rice.

U can add little oil because u have to stir fry the vegetables...and that will not spoil your fried rice.
I would imagine it involves stir frying, and everything chinese requires sesame oil for their fabulous flavor [which i use on everything now... and peanut oil]. Also of course onions, garlic, soy sauce, and to your own taste.
