Hot Dog Cubano

Makes 6

6 soft white rolls (if available, use soft Cuban rolls)
6 tablespoons mayonnaise
1 pound thinly sliced boiled ham
1 pound thinly sliced Swiss cheese
1 pound spicy dill pickles (if available, use kimchee)
1 pound thinly sliced prosciutto
6 tablespoons garlic butter

Slice rolls in half and spread insides with mayonnaise. Layer sandwich with ham, cheese, pickles and prosciutto. Thinly brush the outside of rolls with garlic butter and place sandwich>******************************...
Hot Dogs With Whipped Black-Eyed Pea Spread, Relish and Mustard (Hot Dogs Cuban style)

Makes 12

2 cups plus 2 teaspoons extra-virgin olive oil, divided
1 bunch rosemary, finely chopped
3 cloves garlic, sliced
3 cups black-eyed peas, cooked
2 tablespoons roasted garlic cloves
Dijon mustard to taste
12 hot dogs
12 hot dog rolls
2 cups bright green pickle relish

In a pot on the grill with 2 teaspoons oil, add rosemary and sliced garlic and heat for about 1 minute. Stir in black-eyed peas. Add just enough water to cover peas, and then transfer mixture to blender. Puree the mixture while slowly adding roasted garlic and remaining extra-virgin olive oil in a steady stream. Once emulsified, add Dijon mustard and salt and pepper to taste.
Place hot dogs on grill; cook until crispy and warmed through. Slit rolls down the middle and toast on the grill for 1 minute. Spread pea puree on one side of rolls and mustard on the other. Place a hot dog in each roll, slit each down the middle and fill with relish.

In honor of the Chicago White Sox's World Series appearance, Vienna Beef is introducing the "Smokin' Series Dog" to hot dog lovers -- and Chicago baseball fans -- nationwide.

Created by Chicago-based Vienna Beef corporate chef and taste guru Mark Sobczak, the "Smokin' Series Dog" is an all beef spicy hot dog grilled open face and served on a fresh bolillo roll with white onions, seasoned black beans, and shredded Chihuahua and cotija cheeses.

"The spicy flavor or 'Hot' hot dog honors the hot Sox season, the black beans and white onions honor the team's colors, and the roll and cheese honor Ozzie Guillen's heritage," Sobczak said.

Here's the recipe:

The Smokin' Series Dog:

* One 3 lb can of cooked black beans, any brand
* One 15 oz can of diced tomatoes with green chilies
* One teaspoon of olive oil
* One tablespoon of minced garlic
* Cumin and Salt to taste
* 8 oz. shredded Chihuahua cheese
* 8 oz. Shredded Cotija cheese
* Eight Vienna Beef spicy Polish sausages, or for a milder taste, use Vienna Beef hot dogs
* Eight bolillo rolls, available at your local Hispanic grocer
* One chopped onion

Cooking Instructions:

* Saute olive oil and minced garlic for one minute.
* Add in diced tomatoes with green chilies, cook for two minutes.
* Drain beans and add to diced tomatoes.
* Add cumin and salt to taste.
* Heat until warm.
* In a separate bowl, combine the cheeses.
* Coarsely chop onions.

* Broil or grill Vienna Beef spicy Polish sausage or hot dog.

* Place hot dog in split roll. Top with one tablespoon diced onions and beans.

* Top with Mexican cheese.

Venezuelan Hot Dogs - Recipe courtesy George Duran

8 hot dog rolls, preferably potato
8 hot dogs, preferably pork
1 yellow onion
1/4 head green cabbage
1 (6-ounce) bag potato chips
Mayonnaise
Mustard
Ketchup

Fill a large pot that has a flat-bottomed steamer insert with water and bring it to a boil. Arrange the rolls in the steamer, put the hot dogs in the boiling water, and cover with the steamer and lid. Cook until the hot dogs are heated through and the rolls are warm and soft, about 5 minutes. Be careful not to over steam the rolls as they can become soggy.

While the dogs are cooking, cut the onion into 6 smaller pieces, put them into a food processor, and pulse until they are finely chopped. Remove the onions to a bowl and do the same with the cabbage. Crush the potato chips into very fine pieces.

Remove a roll from the steamer. Put a hot dog into it and top with some onion, cabbage, and crushed chips. Squirt on some mayonnaise, mustard, and ketchup and enjoy!
