This recipe is really good.
PANSIT
1/4 c. oil
1 c. shrimp
2 cloves garlic, minced
1 sm. cabbage, shredded
3/4 lb. bean sprouts
1 lg. carrot, sliced
1 lg. onion, sliced
2 bundles or 1 pkg. bihon (noodles)
2 pieces Chinese sausage, sliced
1 sm. bunch celery, sliced
1 tsp. salt
1/2 c. chicken broth
2 tbsp. soy sauce
1 c. sliced pork
In a wok or a large frying pan, lightly saute Chinese sausage for 2-3 minutes. Remove sausage from pan and drain on paper towels. Add oil and heat, adding garlic and pork. Stir fry 5 minutes or until pork is cooked; then add shrimp and cook another 2-3 minutes. Add cabbage, carrot, celery, onion and bean sprouts. Stir fry 2-3 minutes. Add broth and simmer until vegetables are about half cooked.
Soak Bihon approximately 30 minutes or until soft. Drain well. In a very large bowl toss Bihon with vegetables. Season with soy sauce and salt. Garnish with chopped green onions. Serve hot with lemon.

Pancit Bihon
1 lb boneless skinless chicken breasts or boneless
skinless chicken thighs
1 lb lean pork, fat trimmed
1 lb small shrimp, shelled
3 cloves garlic, minced
1 small onion, thinly sliced
1/2 Chinese cabbage, thinly sliced
3 carrots, julienned
1/4 cup sesame oil or vegetable oil (may be substituted)
3 tablespoons soy sauce
1/2 teaspoon salt
1 teaspoon pepper
1 lb rice noodles (or bean threads)
1. Start by soaking rice stick noodles in warm water for 15 minutes or until softened, then drain.
2. Bring chicken, pork and 1-1/2 cups water to a boil, then reduce heat and simmer 15 minutes.
3. Remove from heat; shred the meat into small pieces- reserve the water.
4. (A sturdy mixer such as a Kitchen Aid can be handy in shredding meat using the whisk attachment).
5. Heat oil in a large, wide saute pan.
6. Saute garlic and onion in oil until onion is translucent.
7. Add shredded meat, shrimp and soy sauce and stir-fry 5 minutes.
8. Over high heat, add cabbage, carrots, salt, pepper and 1 cup of broth.
9. Stir fry for an additional 2 minutes.
10. Reduce heat to low and add rice noodles, tossing gently (wooden spoons work best) until cooked through and well blended, approximately 3 minutes.
11. If the mixture seems dry, add more broth.
12. Serve with soy sauce.
Here's a very simple recipe
Boil 1 whole chicken in water and a pinch of salt until it's cooked. Take out, shred meat with 2 forks. Throw away the skin and bones. Soak 3 8oz pkgs of rice noodles in the broth you boiled the chicken in until it's soft. Drain and save about 1 cup of the broth.
Prepare veggies: Cut half a cabbage and slice thin. Julliene 2 carrots. Cut about 1/4 lb of green beans.
In a hot pan add canola oil to sautee 2 minced cloves of garlic and sliced onions. Add shredded chicken and veggies. Add 1/8 cup of soy sauce. Stir. Add noodles and mix everything together until it's nice and colorful. Cook for about 5-10 minutes longer. The reserved cup of broth is if you need it incase your pancit is a bit on the dry side. You could toss it otherwise. And that's pretty much it. Put it on your plate and enjoy. I like it with a splash of lemon.
