You'll probably get a bunch of cut and paste answers. Sorry, I'm not into that. Here's my advice: You probably are stirring the rice while it cooks. For Latin rice, I first wash my rice and rinse it well, then drain it and let it dry some. I heat a Tbsp or so of fat (I prefer lard) in my rice pan and add the rice; I usually add a couple cloves of mashed up garlic also. Stir it and slightly brown the rice - 2 or 3 minutes. Add your cooking liquid (ratio of one part rice to two parts liquid) Bring it to a boil, then put the lid on and turn down the heat to really low. Put the lid on tight and don't "peek" for about 25 minutes. It should have holes in the rice when you check it. "Fluff" it up with a fork. if you stir it too much, it can get mushy.

Here's a great tip: put a couple of spoons of cooking oil in a pan. Sautee your dry rice in the oil for a few minutes until slightly golden. Then add JUST a little over 2 cups of liquid for every one cup of rice and put the lid on until it's fluffy.
Also if you use a long grain rice there is a little less starch and it won't be as sticky. If your using other liquids, like tomatoe sauce, that gets counted too (as part of the liquid that you should be measuring in that 2:1 ratio with the rice).
That's all you need to know for fluffy and unsticky rice.
soak the rice in warm water and for ten minutes and right before cooking em put a table spoon of vinegar in boiling water..... also rinse em in cold water two times before putting them in boiling water.....
use less water
